Moringa is a rich source of beta-carotene, vitamin A, vitamin B1 (thiamine), B2 (riboflavin), B3 (niacin), B-6, folate, vitamin C, calcium, potassium, iron, magnesium, phosphorus, and zinc

Food Uses

The leaves, flowers, seeds and fruit of the moringa can all be consumed raw or cooked. The leaves can be added to salads, soups, or sauces or cooked as a spinach substitute. The flowers must be soaked in water before consumption as many insects are attracted to the flowers and may still be inside the petals when harvested. The stamen and pistils should also be removed before eating. The flowers when cooked taste like mushrooms and asparagus. They can be used in salads, smoothies, juices, stir fires, garnishes, soups, and stews. The seeds can be used to make an edible clear odorless oil called ben oil. The oil can be used for cooking. The seeds can also be eaten like peas or roasted. The fruit of the moringa tree is often consumed similar to green beans. When cooked it has a slight asparagus taste.
